It is very convenient to roll out a layer of dough directly on a silicone baking mat, form cookies on it and not remove them from there, but bake them immediately, transferring the mat to a baking sheet.

Mix flour, starch, baking soda, pour it into a heap onto a work surface, make a hole in the center, pour granulated sugar into it, as well as vanilla sugar, beat in the eggs. Knead the dough, gradually adding butter, cut into pieces - the dough should be plastic. Stir nuts into the dough, then divide it into strands 2.5 cm thick and refrigerate for 1 hour, then cut into pieces 0.5 cm thick. Place the pieces on a greased baking sheet, let cool slightly, and cover with a glaze of powdered sugar and rum.

You will need:
150g shelled walnuts,
50g sugar,
40g starch,
4 eggs,
zest of 1 lemon,

Grind egg yolks with sugar, add coarsely chopped nuts, grated zest of 1 lemon, vanilla sugar. Beat the whites into a strong foam, mix them with the yolk mixture and starch. Place the prepared dough using a teaspoon onto a greased baking sheet. Bake until browned in a preheated oven at medium temperature.
Recipe for walnut cookies with hazelnuts
You will need:
200g flour,
130g sugar,
100g hazelnuts
100g butter,
1 egg
1 tsp lemon zest,
½ tsp. baking powder,
a pinch of salt,
vanillin.
Grind the nuts very tightly into fine crumbs, mix half the nuts with flour, baking powder, vanilla, lemon zest, and salt. Grind the butter with sugar and beat in the eggs, gradually mix this mass with the flour - the dough should be soft and non-sticky. Wrap the dough in film and refrigerate for half an hour. Then divide the dough into equal small pieces, roll each into a ball the size of a walnut, and bread in the remaining nuts. Cover a baking sheet with parchment, place the balls at a distance of 2-3 cm from each other, flatten on top, bake for 15 minutes in an oven preheated to 170 degrees.
