5. When the sugar has dissolved and boils, we can see that the caramel has become brownish and thick. That's when it's time to add 1 tablespoon of honey. After adding honey, cook for about 5 more minutes and stir constantly with a spoon.

Please note that again our mass has darkened, thickened and boiled. Now you need to add 1 spoon of lemon juice and 2 tablespoons of water. Let's be careful, because after the lemon juice, the caramel will splash.
