Apple strudel French recipe. Write down the most successful and simple recipe for the most delicious apple strudel! Filo dough option

Strudel is the real pride of Austrian cuisine. Despite the fact that the stuffed roll is prepared from simple ingredients, it has a very harmonious, balanced taste. The basis for strudel is always taken from the exhaust puff pastry- thin, like a sheet of paper. But the filling can be completely different: mushroom, meat, berry, fruit. But the classic is strudel with sour apples.

According to this recipe, table vinegar is added to the dough. Many housewives ask the question: what is this ingredient for? It's very simple: vinegar gives the finished dough fragility, makes it flaky and crispy.

It is recommended to put as much filling into the strudel as possible, so don’t skimp on the apples. Sour fruits are especially good in baking. They neutralize sugariness and add bright notes to baked goods. Do apples need to be cooked first? Not necessary! During the time that the roll spends in the oven during baking, the fruit slices become soft and juicy.

The specified amount of ingredients yields two strudels about 50 cm long.

how to make apple strudel - step by step photo recipe

Ingredients:

For the test:

  • wheat flour – 200 g,
  • chicken egg – 1 pc.,
  • water – 50 ml,
  • vinegar – 1 tsp,
  • vegetable oil – 2 tbsp.

For filling:

  • apples – 6 - 7 pcs.,
  • breadcrumbs - 4 tbsp.,
  • granulated sugar – 4 tbsp.,
  • cinnamon – 2 tsp,
  • juice of half a lemon.

Cooking process:

Pour the flour sifted through a fine sieve into a sufficiently spacious container. Make a well in the middle and crack the egg into it.

Add oil, vinegar and warm water.

Knead the dough until it stops sticking to your hands. Form it into a bun, coat it on all sides with a thin layer of sunflower oil and leave to rest for 10 - 15 minutes.

Apples, thoroughly washed with hot water, remove seeds and cut into small pieces. To prevent the fruits from darkening, sprinkle them with lemon juice.

The next step is to divide the dough into two equal parts, and then roll it out well and stretch it out. Experienced chefs claim that you can read a newspaper through properly rolled out strudel dough. Whether you can give it this shape depends on your skill. In any case, than thinner dough, the tastier the finished baked goods.

Sprinkle a sheet of homemade puff pastry with a thin layer of breadcrumbs. This is done so that it does not become soggy from the wet apple filling.

Place apples on top. Sprinkle the filling with granulated sugar and ground cinnamon.

Now you should form the strudel. First, fold the sides of the dough inward on both sides.

Then tuck opposite sides and begin to carefully roll the dough and filling into a roll. By the way, it is thanks to its shape that strudel got its name, which translated from German means “whirlpool.”

Do the same manipulations with the second half of the dough. Then place the strudels on a baking sheet lined with baking paper. Lightly grease them with vegetable oil and place in the oven, preheated to 200 degrees.

Bake the apple strudel in the oven for at least 40 minutes until light golden brown.

Sprinkle the warm roll generously with powdered sugar, cut into portions and serve immediately.

This apple strudel is prepared with deviations from the traditional Austrian recipe. Instead of stretch dough, ready-made puff pastry is used, which saves a lot of time.

The baked goods are very tasty and aromatic. Layered cake goes well with apple filling, sweet and sour, with a spicy cinnamon aroma. And if you complement the dessert with a scoop of ice cream and a cup of strong coffee, it’s simply impossible to tear yourself away from it!

The filling is apples poached in butter, sugar and cinnamon. Walnuts perfectly highlight their taste, so be sure to add at least one walnut, chopped into fine crumbs. And to feel confident in the process of preparing “puff” apple strudel, follow the step-by-step recipe.

Ingredients

  • puff pastry without yeast 400 g
  • wheat flour 3 tbsp. l.
  • green apples 4 pcs.
  • butter 20 g
  • sugar 80 g
  • cinnamon 1 tsp.
  • bread crumbs 1.5 tbsp. l.
  • walnut 1-2 pcs.
  • egg yolk 1 pc.

How to make apple strudel from puff pastry

  1. Remove the puff pastry from the packaging and leave to defrost at room temperature, covered with a towel. In the meantime, we are preparing the apple filling for our strudel. To do this, peel the apples (sour variety) and cut out the cores. Then cut the pulp into cubes - not too finely, otherwise when double heat treatment they will lose their shape and turn into jam.

  2. Next, melt the butter in a frying pan or saucepan. Place apples in heated oil, add cinnamon and granulated sugar.

  3. Increase the heat and cook the apples, stirring for 5-7 minutes until all the liquid has softened and evaporated. The filling will retain its shape perfectly, the apple pieces will remain intact and will be completely saturated with the aroma of cinnamon and sugar syrup.

  4. Place the melted puff pastry on work surface, sprinkled with flour. Roll it out into a thin rectangular layer (approximately 30x35 cm). Mix bread crumbs with dried walnuts, crushed in a blender to fine crumbs. Add a tablespoon of sugar and a couple of pinches of cinnamon. Sprinkle the resulting crumbs evenly over the dough, not reaching the edges. Spread apple filling on top.

  5. Roll the dough into a roll so that the filling is completely covered.

  6. We carefully bend the sides of our roll down. Place the product on a baking sheet lined with parchment. Lubricate the top with yolk, shaken with a spoonful of water.

  7. We make transverse cuts on the roll through which air will escape during baking.

  8. Place the baking sheet in the oven, preheated to 200 degrees. Bake for 30-40 minutes until the top of the strudel is browned.
  9. Sprinkle the dessert with powdered sugar.
Serve the apple strudel while it is still warm, topped with a scoop of vanilla ice cream.

On a note:

You can use not only apples as a filling; cherries, cottage cheese or poppy seeds are perfect.

Try to cook one of the most delicious pastries- homemade strudel with apples and you will see that it is not at all difficult to make! The apple strudel turns out juicy inside and, at the same time, with an appetizing crispy crust. And it will help you prepare baked goods step by step photo-recipe for strudel with apples.

The success of making strudel depends, first of all, on properly prepared dough. Flour must be sifted before cooking. The dough needs to be thoroughly kneaded, then left to proof for 30 minutes - 1 hour, so that the gluten dissolves - then you can easily roll out the dough as thin as possible.

From the specified amount of ingredients you get 2 strudels, because... For convenience, I divided the prepared dough into 2 parts.

Ingredients for the dough:

  • Flour 300 g
  • Warm water 150 ml
  • Egg 1 pc.
  • Salt - a pinch
  • Vegetable oil 3 tbsp.

Ingredients for apple strudel filling:

  • Apples (large size, preferably sweet and sour green varieties) 4 pcs.
  • Raisins 100 g
  • Breadcrumbs 3 tbsp.
  • Vanilla sugar 10 g
  • Lemon 1/2 pcs.
  • Nuts 100 g
  • Sugar 250 g
  • Butter 6 tbsp.
  • Cinnamon 1 tsp.
  • Powdered sugar - for sprinkling

Apple strudel recipe:

1. Pour sifted flour into a deep bowl, add salt at the tip of a teaspoon. Make a well in the center, pour warm water, vegetable oil into it and add an egg. Knead into a soft and elastic dough that should not stick to your hands. Knead the dough thoroughly and intensively, for about 10 minutes.

2. Roll into a ball and leave the prepared dough to “rest”, greasing its surface with oil and covering it with cling film - for at least half an hour. This is necessary so that the dough can then be stretched more easily and not break, because... During the “rest” of the dough, the flour swells and all the ingredients combine well.

3. At this time, you can start preparing the filling. Wash the apples, dry them and chop them into small pieces, sprinkle with lemon juice. They can be either peeled or cut together with the peel.

4. Prepare nuts, breadcrumbs and raisins. Chop the nuts, wash and dry the raisins. Rusks can be bought ready-made or made from sweet whole crackers or dried white bread, twisting them in a meat grinder or grinding them in a blender.

5. Mix sugar with cinnamon and add vanilla sugar.

6. Lightly sprinkle the table with flour and begin rolling out the dough. First, roll it out on the table with a rolling pin, then you can transfer it to a towel and start stretching the strudel dough with your hands. To do this, you need to put your hands, palms down, under the dough, as a result the dough will rest on your knuckles. And carefully push the dough from the center to the edges around the perimeter. Do everything slowly so as not to tear the dough. If it suddenly breaks, make a patch from the dough.

7. Ideally, the pattern of the towel can be seen through the resulting thin layer of dough.

8. Melt the butter and brush the surface of the dough with it. Let's start filling. Place the filling on one side of the dough in a path approximately 12-15 cm wide, not forgetting to leave 8-10 cm from the edge of the dough: first breadcrumbs, apples on them, sprinkle sugar mixed with cinnamon on top, then nuts and raisins on top. Add grated lemon zest if desired.

9. Lift the edge of the dough closest to the filling and cover the filling with it, grease it with butter. Continue forming the roll with a towel, also folding the side edges inward, each time brushing the dough over the filling with butter. The seam of the finished roll should be at the bottom.
